I’m getting a lot better about eating breakfast in the mornings. My breakfasts used to consist of a soy milk latte and that would hold me over in the mornings through a hot power yoga sesh until lunchtime. However, I couldn’t keep that up forever. My favorite thing about oatmeal is it’s filling and light so I never feel it when I’m active and I’m also not hungry. Oatmeal, almond milk and blueberries are gentle on the tummy, if you need that kind of thing like me.
I make this oatmeal almost every morning and it’s the best. I use a combination of fresh and frozen blueberries. The frozen blueberries are pretty sweet when heated and resemble a compote without all the extra sugar, and the fresh blueberries have a tartness. Also, guys….a huge game changer…… is cocoa nibs. I picked up a little container at my local farmers market for less than two dollars and let me tell you, they live up to the hype for sure.
Fun to note, for almost three years I lived without a microwave, but I have one now and the best part of that means this breakfast cleans up in the rinse of a bowl and is ready in two and a half minutes.
Blueberry Oatmeal
Ingredients
- 1/2 cup Old Fashioned Rolled Oats
- 1 cup water
- 1/4 cup frozen blueberries
- handful fresh blueberries
- 2 tsp cocoa nibs
- splash almond milk
- cinnamon to taste
Instructions
- 1) Pour 1/2 cup oats and 1 cup of water into a microwave safe bowl and microwave for 2 minutes.
2) Add 1/4 cup of frozen blueberries to oats and microwave for another 30 seconds3) Top with fresh blueberries, cocoa nibs, cinnamon and almond milkEnjoy!Tip: Don’t use a bowl that is microwave safe but it “may get hot in the mircrowave” because your oats will most likely overflow
